Spotify's own help page describes the username as "designed to identify you on Spotify", and says a display name "replaces the username where it shows on your profile, app, and playlists". You don't need the username to sign in: you can log in with your email address and password, or the method you signed up with, such as Apple or your phone number. These are Spotify's own steps for the mobile app:

Tap View profile.

Premium is tied to the account. Cancel it on the old account before you stop using it, or it keeps charging.
